Today, I wanted to share more on lunch and dinner meals that are easy to sneak veggies into.
I know this isn’t the best way to teach kids to eat healthier, we want them to enjoy a wide variety of healthy options, but we all know that that is easier said than done. My kids through phases where it’s like pulling teeth to even get them to look a vegetable. So, instead of tears accompanying each meal sometimes we have to sneak them in meals. Some days, my kids won’t eat anything but turkey dogs and Mac & cheese, so I do what needs to be done to make sure they are getting enough nutrients.

I mentioned in my blog yesterday that I shred zucchini and mix it my ground meat for hamburgers, meatloaf, I mix it into pasta casseroles, and I have even put it UNDER the pizza sauce of homemade pizza. Most times the kids know and see me mix it in but I guess since it hides so well and is virtually tasteless, they don’t fight it. Win, win!
This pasta sauce recipe is my go to. It’s not only delicious and easy to make but a 1/2 cup serving is 3 servings of vegetables. Say what?! Yes, 3 servings. If I wouldn’t get bored of pasta I would make this daily to get veggies into not only the kids but for me. I’ve said it before, I don’t care for veggies even though I do get my recommended in every day, But I do “sneak” them into meals for myself, also.
This Broccoli, Chicken, Mac & Cheese doesn’t hide the vegetables but if I cut the broccoli up small my kids don’t mind it. Plus, this recipe is a healthier version. You could also puree carrots and add it in so the vegetables are hidden.
There are so many ways to get kids to eat healthier, you sometimes just have to hunt for the right recipe or trick that works for your family. Don’t give up, keep leading my example and it will pay off.
